Persian Noodles with Lentils
These were very good. The mix of sweet and savory was unique and interesting. Picky Brandon didn’t like the noodles but liked the lentil mixture so we will probably make it again to serve alone, with rotini or over a salad.

Bountiful Breakfast Burritos

Anything with burrito in the name is bound to win with Brandon so I knew we had to make these when we had the time for him to sit down and eat a good meal. He really liked them and so did I so I would call this a hit. The extra sauce was good to dip the burrito in. Nice filling morning meal. 

Peanutty Tofu Roll Up
I really liked these but Brandon didn’t cake for them. I am not really sure why but they weren’t a match for him. Brandon is picky because I thought these were good. I love tofu any way, shape or form though. I will eat it a few pieces raw when cooking something… I have been told I am weird.

Baby Spinach with Lemon and Garlic
This was simple and tasty. Easy to make with on hand ingredients. Need to keep spinach in the fridge for this and other uses because we really like it here. :)

Lemony Lentil Soup and Indian Saag (spinach)

These were both very good and the soup makes a lot. Would possibly make a double batch next time and try freezing some for later. I liked the spinach more than Brandon did but I am big on Indian food and a huge saag fan and a fan of anything green. It tasted very authentic. Both were winners for me! :)

Quinoa with Pintos (not sure of name on this one)
This one was pretty good and very inexpensive to make using quinoa from a bulk store and pressure cooked dried beans. Very filling so something we would possibly make again.

Marinated Mushroom Wraps
These were pretty simple and Brandon LOVED them. He devoured them so fast. These are definitely on the “make again” list. This was refreshing and perfect for the hot summer months. This book is becoming more and more worth the purchase and I am considering buying it on my Kindle Fire as well for shopping convenience.

PB and J Muffins
These were gooey and delicious but worth the effort and the mess! Wash your hands after eating these folks because you are going to have a sticky situation! I think these would be great for a kid or an adults lunch box if you don’t overdo the jam filling. Did I mention I am not good at measuring? I kind of just used a spoon and decided to wing it on the filling. Would love to make these for the children in the family. I can see them going crazy for them. We did half of them strawberry and half grape but the strawberry were better.

We made this the day after the noodles to go with the leftovers and we liked this one much more. Tempeh is a favorite in this household so it is pretty hard to go wrong. It had unique flavors and would go well with many side dishes. Will make this one again for sure.

These were good but not a favorite. Maybe we used slightly more ginger than we like because that is what we tasted the most. It is hard to make myself measure every little thing because I just don’t cook that way. We look forward to the other noodle recipes but this one wasn’t our cup of tea. Sorry!
